ZESTY SALSA FOR CANNING

2005-08-20

Zesty Salsa for Canning image

I got this years ago from the lady in our church who canned it. I've never made it but I've eaten lots of it! It's the best salsa I have ever had. Especially good with lime tortilla chips or on taco salad (recipe #102234).

Provided by Marg CaymanDesigns

Categories     Sauces

Time 1h

Yield 6 pints

Number Of Ingredients 9

Ingredients:

  • 10 cups roughly chopped tomatoes
  • 5 cups chopped and seeded bell peppers
  • 5 cups chopped onions
  • 2 1/2 cups hot peppers, chopped, seeded
  • 1 1/4 cups cider vinegar
  • 3 garlic cloves, minced
  • 2 tablespoons cilantro, minced
  • 3 teaspoons salt
  • 1 (6 ounce) can tomato paste

Steps:

  • Combine all ingredients except tomato paste in large sauce pot.
  • Simmer until desired thickness.
  • Stir in tomato paste.
  • Ladle hot salsa into hot jars leaving 1/4 inch head-space.
  • Process 15 minutes in a hot water bath.
  • Note: use more hot peppers for a very hot salsa or less for mild.
  • It depends on how hot your peppers are and how hot you like your salsa.
  • I never get close to 2 1/2 cups for our mild salsa.

Time 1h30m

Yield 17

Number Of Ingredients 13

Ingredients:

  • 30 tomatoes, peeled and chopped
  • 10 cups chopped onions
  • 2 cups vinegar
  • 2 (8 ounce) cans tomato paste
  • 2 green bell peppers, chopped
  • 2 red bell peppers, chopped
  • 4 banana peppers, chopped
  • ½ cup white sugar, or more to taste
  • 10 cloves garlic, chopped
  • 8 teaspoons pickling salt
  • 2 teaspoons ground black pepper
  • ½ bunch fresh cilantro, chopped
  • 17 (1 pint) canning jars with lids and rings

Steps:

  • Combine tomatoes, onions, vinegar, tomato paste, green bell peppers, red bell peppers, banana peppers, sugar, garlic, pickling salt, and black pepper in a large stockpot; bring to a boil, reduce heat to medium-low, and simmer for 30 minutes. Mix cilantro into salsa.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack salsa into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 35 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

  • Remove the skins from the tomatoes. To do this, make an “X” in the bottom of the tomatoes, than place in boiling water for 60 seconds. Then, remove the tomatoes from the water and place directly into a bowl if iced water to shock. The skins should slip right off. (I use my spider to transfer the tomatoes from the boiling water to the ice water without getting splashed.)
  • Place all of the ingredients in a large pot (you will need a 10qt. saucepan for this batch, or split the ingredients among 2 saucepans) and simmer for 20-30 minutes. Taste! Add more spice as needed.
  • You’ll then process using a water bath. To do this, bring a large saucepan filled with water to a boil. Your saucepan needs to be tall enough to have the water cover the jars by 2 inches- though the jars will displace some of the water as they are added.
  • Add the jars to the water bath and cover with a lid. Process for 30 minutes, then remove. I use these tongs to make things easy.

  • Preheat oven to high broil with rack positioned 5 inches from heat source. Arrange tomatoes, cut sides up, on a rimmed baking sheet. Sprinkle evenly with 1 tablespoon of the salt. Broil in preheated oven until tomatoes are slightly charred and skins blister, about 15 minutes. Carefully remove from oven; let stand until cool enough to handle, about 15 minutes. (Do not turn oven off.)
  • Using your hands, peel tomatoes over baking sheet, reserving any tomato liquid; discard tomato skins. Transfer peeled tomatoes and liquid to a large bowl. Crush tomatoes into small chunks using your hands or a whisk. Set aside.
  • Toss together poblanos and 1 tablespoon of the oil on a separate baking sheet. Broil until blistered, about 12 minutes, turning once halfway through cook time. Transfer to a heatproof bowl; cover tightly with plastic wrap. Let stand 10 minutes. Remove and discard skins and seeds from poblanos. Chop poblanos.
  • Heat remaining 3 tablespoons oil in a large Dutch oven over medium-high. Add onions and garlic; cook, stirring occasionally, until onions just turn translucent, 5 to 6 minutes. Add tomatoes (and any accumulated liquid), poblanos, vinegar, sugar, cumin, and cayenne. Bring to a boil over high. Reduce heat to medium; simmer, stirring often, until mixture has thickened and little to no liquid pools on the surface, 10 to 12 minutes. Remove from heat; stir in cilantro, jalapeños, and remaining 1 tablespoon salt. Let cool to room temperature, stirring often, about 1 hour.

  • Pickled Mushrooms. Have you ever had pickled mushrooms? If not, this recipe is a must-try. These flavorful shrooms are a fantastic side dish to an array of dishes, from ribs to sausages to steak.

  • Add all ingredients to the bowl of a food processor. I like to add in the jalapeños, onion and garlic first and then the cilantro and tomatoes, so the tomatoes do not get too liquid-y. Pulse about 10 or so times and until all ingredients are combined and diced, but be sure to stop before the salsa becomes too watery. However, you can pulse longer if you do like your salsa with more liquid.
  • Taste the salsa and add more ingredients as desired. I would advise stirring in the extra ingredients, not pulsing in the food processor. The salsa will become too watery, quickly.
  • I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to intensify. Salsa will keep for about 1 week in an airtight container or jar in the fridge; however, it's never lasted that long in this household.

  • Before you start mixing things up, get your jars out and start sanitizing them so they'll be ready when you are. There are several ways to do this. I have found it’s easiest just to stick them in my dishwasher and push the sanitize button. Or if you don’t have a sanitize button, just run them through a really hot rinse cycle.
  • I use my food processor for a lot of the chopping. Mostly because once I touch a jalapeno, I can't take my contacts out for a week! I am a wimp for spicey stuff, and I don't want all that juice all over my hands. If you don't have a food processor, try using the pulse setting on your blender, or just use an old fashioned knife and chop away!Start by chopping your peppers. I don't like my salsa very chunky, so I gave it a GOOD chopping to get rid of any of those pepper chunks. You're going to need a big bowl or pot to mix the salsa all up in.
  • Next, chop the onions. I love the difference in color and flavor the red onion brings, so I used about half yellow onion, and half red onion. And I chopped it probably too much here. But it's really up to you how chunky you want it.You will want to drain off any excess juice from your peppers and onions. This is already a pretty thin salsa, so if you don't let the extra moisture run off, you're going to end up with a REALLY runny salsa.
  • After you have your peppers and onions mixed together and drained, add your vinegar. You need your vinegar because it adds the acid for canning. If you are using this as a fresh salsa, I would recommend leaving the vinegar out. But if you're canning it, keep the vinegar.
