Go-To Chocolate Cupcakes image

Provided by Food Network Kitchen

Categories     dessert

Time 1h15m

Yield 12 cupcakes (or about 48 mini cupcakes)

Number Of Ingredients 12

Ingredients:

  • 6 tablespoons unsalted butter, cut into pieces
  • 1/2 cup unsweetened Dutch-process cocoa
  • 1/3 cup freshly brewed coffee
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1/3 cup sour cream
  • 1 teaspoon pure vanilla extract
  • 2 large eggs, at room temperature
  • Your favorite frosting, for topping

Steps:

  • Preheat the oven to 350 degrees F and position a rack in the middle of the oven. Line one 12-cup standard muffin tin or two 24-cup mini-muffin tins with cupcake liners.
  • Combine the butter, cocoa, coffee and 1/3 cup water in a microwave-safe bowl. Cover with plastic wrap and microwave on high until the butter melts, about 1 minute. Whisk to combine.
  • Meanwhile, whisk the flour, sugar, baking powder, baking soda and salt in a large bowl. In a small bowl, beat the sour cream, vanilla and eggs. Whisk the hot cocoa mixture into the dry ingredients. Then stir in the sour cream mixture just to combine; don't overmix.
  • Divide the batter evenly in the prepared muffin tin, filling each cup about three-quarters full. Bake until a toothpick inserted into the center of the cupcakes comes out clean, 18 to 20 minutes for standard cupcakes or 16 to 18 minutes for minis.
  • Cool the cupcakes in the tin on a rack for 10 minutes, then remove from the tin and cool on the rack completely. Frost and decorate as desired.

  • You can add all the cupcake batter ingredients listed above to a high-powered blender and mix until smooth. Alternatively, mix the soy milk, vinegar, sugar, vanilla extract, and coconut oil together in a mixing bowl or stand mixer. Combine the flour, cocoa powder, baking soda, baking powder, and sea salt together in another bowl with a fork or whisk. Then add the liquid ingredients to the dry and stir until just combined. If using a stand mixer, add the dry ingredients into the liquid while mixing on low-speed and continue mixing until just combined.
  • Pour the batter in a muffin pan with liners, each about 3/4 full. Bake in a preheated oven set to 350°F for 15 to 18 minutes or until a toothpick comes out clean from the centre of a cupcake. Baking time may vary depending on your oven, mine baked in a convection oven so they were closer to 15 minutes.
  • To make the frosting, cream the cold vegan butter with a hand mixer or in a stand mixer until a little more smooth. Gradually add some confectioners sugar until a stiff mixture is formed.
