Maduros are a very popular ingredient in Cuba. They are plantains that are ripe and sweet, as compared to green plantains. The riper and blacker the plantains are, the sweeter they will be when cooked.

Ingredients:

  • 48 ounces (6 cups) vegetable oil, for frying
  • 2 ripe plantains, peeled and sliced into 1/4-inch-thick pieces
  • 3/4 pound Mexican chorizo, casings removed
  • 18 large button mushrooms, stems removed, caps wiped clean
  • Extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Cotija cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • For the filling: Place oil in a Dutch oven at least 4 inches deep and heat to 375 degrees F. Fry the plantains until golden brown, about 2 to 4 minutes. Remove, drain on paper towels, then chop into rough dice.
  • In a medium skillet over medium heat, add chorizo. Stir to break up the meat and brown evenly, about 4 to 5 minutes. Remove from heat, add plantains and set aside.
  • For the mushrooms: Line a rimmed baking sheet with parchment paper. Place mushrooms cap-side up on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven 10 to 12 minutes.
  • Remove mushrooms from oven and fill cavities with chorizo mixture. Sprinkle mozzarella on top followed by Cotija. Place back in the oven until cheese has melted, 10 to 12 minutes. Serve.

  • 3 cups mushroom, stemmed and halved button
  • 1 cup white onion, diced
  • 1 cup walnuts
  • 1 can chickpeas, drained
  • ½ jalapeño, seeded and roughly chopped
  • 4 cloves garlic, roughly chopped
  • 2 tablespoons olive oil
  • 2 tablespoons paprika
  • 1 teaspoon garlic powder
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 2 teaspoons kosher salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground coriander
  • ½ teaspoon chili powder
  • ½ teaspoon black pepper
  • ½ teaspoon onion
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon cinnamon
  • 1 tablespoon tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon soy sauce

Steps:

  • Add the mushrooms, onion, walnuts, chickpeas, jalapeño, and garlic to a food processor. Pulse until very coarsely chopped.
  • Heat the olive oil in a large skillet over medium heat. When the oil is shimmering, add the mushroom and chickpea mixture to the pan. Sprinkle in the paprika, garlic powder, cumin, oregano, salt, smoked paprika, coriander, chili powder, pepper, onion powder, red pepper flakes, and cinnamon. Sauté for 8-10 minutes, stirring often, until lightly browned.
  • Add the tomato paste. Continue cooking for 3 minutes more, until the mixture is slightly thickened and browned.
  • Add the apple cider vinegar and soy sauce. Stir and sauté for 2 minutes, until the liquid is absorbed.
  • Serve the chorizo hot in your favorite dishes.

  • 3 chorizo sausages, thickly sliced diagonally
  • 300 g swiss brown button mushrooms, thickly sliced or 300 g mushrooms, of your choice
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme leave (Can use coriander leaves instead of above herbs if desired)

Steps:

  • Heat a large non stick frying pan over medium heat and add the chorizo and cook, turning occasionally for 5 mins or until golden brown.
  • Add the mushroom and cook stirring for 5 minutes or until mushroom softens.
  • Stir in the rosemary and thyme and toss until combined.
  • Transfer to a warm serving bowl and serve immediately.
