I experimented with some ways to cook scallops one night with my family. This was everyone's favorite and it has become a regular dish at our family fry nights. If serving as a main dish, make twice as many servings as people (about 8 scallops per person).

Ingredients:

  • vegetable oil for frying
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • ½ tablespoon salt
  • ½ tablespoon ground black pepper
  • 12 large fresh scallops

Steps:

  • Heat oil in a deep-fryer or large saucepan to 400 degrees F (200 degrees C).
  • Pour buttermilk into a bowl. Combine flour, salt, and pepper in a separate bowl.
  • Immerse 4 or 5 scallops in the bowl of buttermilk. Transfer to the flour mixture; roll around until thickly coated.
  • Lower scallops gently into the hot oil. Cook until golden and crispy, 3 to 4 minutes. Drain on a plate lined with paper towels. Repeat with remaining scallops.

  • ½ cup finely crushed buttery crackers (such as Ritz®)
  • ½ teaspoon garlic powder
  • ½ teaspoon seafood seasoning (such as Old Bay®)
  • 2 tablespoons butter, melted
  • 1 pound sea scallops, patted dry
  • 1 serving cooking spray

Steps:

  • Preheat the air fryer to 390 degrees F (198 degrees C).
  • Mix cracker crumbs, garlic powder, and seafood seasoning together in a shallow bowl. Place melted butter in a second shallow bowl.
  • Dip each scallop in the melted butter and then roll in the breading until completely coated. Set on a plate and repeat with the remaining scallops.
  • Lightly spray the air fryer basket with cooking spray. Arrange scallops in the prepared basket so that they are not touching each other; you may need to work in batches.
  • Cook in the preheated air fryer for 2 minutes. Turn scallops over gently with a small spatula and cook until opaque, about 2 more minutes.

  • Preheat oven to 400°. In a shallow bowl, combine flour, salt and pepper. In another shallow bowl, whisk eggs. In a third bowl, combine bread crumbs, cheese, parsley and garlic salt. , Coat oysters with flour mixture, then dip in eggs, and coat with crumb mixture.   • Pat the scallops dry on the top, bottom and sides with paper towels. A dry surface is crucial to searing.
  • Pour a couple tablespoons of virgin, fino or light olive oil in a nonstick saute pan. Extra-virgin cold-pressed olive oils make excellent finishing oils because of their pure flavor, but they make poor cooking oils because of their low smoking point.
  • Heat the pan on the stove over medium-high heat until you see wisps of smoke wafting from the oil. The oil also shimmers in the light when it's hot enough to develop the sear you're looking for.
  • Season the scallops on both sides with kosher salt and freshly ground black pepper as soon as the oil is hot enough. Waiting until the last second to season the scallops doesn't give the salt enough time to pull moisture from them.
  • Lay the scallops in the pan in a clockwise direction starting at 12 o'clock, spacing them at least 1/4 to 1/2 inch apart. Laying the scallops in one direction starting at an easy-to-remember point in the pan makes it easier to know when to flip them over.
  • Sear the scallops until a deep golden-brown crust forms, about 2 to 3 minutes for calico and bay scallops, and about 4 minutes for sea scallops.
  • Sear the other side until golden brown. It should take the scallops about 30 seconds less to form a crust on the second side than it did on the first side because the scallops are hot now.
  • Take the scallops out of the pan and set them aside. If you want to make a quick pan sauce, melt butter, freshly chopped herbs and lemon juice in the pan and swirl to incorporate.
